Covers human resource management with the overall goal of maintaining food quality and customer satisfaction. Includes the implementation of appropriate procedures for purchasing, receiving, and issuing food, food products, and cooking supplies, and menu management in pursuit of profit.
Prerequisites: CULN 1113 , CULN 1123 , CULN 1133 , CULN 1143 and CULN 1153 , all with a grade of “C” or better
